Honey Contains pollen, dust and air bubbles which tend to induce granulation (Crystallization).The granulation can be retarded by heating the honey to 45 º C to dissolve the crystals present in honey. Filtration then removes part of pollen, foreign particles and wax.

Processing of honey is divided into three steps:

1. Filtration to remove wax, foreign particles after heating to 45ºC It may be noted that Heating of honey up to 45º (below melting point of bee wax) is required to decrees the viscosity of honey.

2. Honey is then heated to 60º-65ºC for 10 to 15 min and passed into falling film evaporate or Vacuums is simultaneously applied to boil the water in honey at lower temperature so that moisture is separated which can be collected separately. This procedure also helps in destroying yeasts.
